Poached pears

200gm Water

100gm White wine

100gm Pear puree

200gm Sugar

 6 Pears 

Cinnamon Stick

Star anise

 

Method

Peal all pears and boil in all other ingredients until soft.

Refrigerator until ready to assemble. 

Blueberry Puree

100gm Sugar 

20ml Orange juice

100gm Blueberries

 

Method

Caramel the sugar until golden brown

Add orange juice.

Add frozen blueberries and cook until all berries get soft.

Serve

Serve with Vanilla Ice cream & Vanilla sauce.

Garnish 

Mint leaves and edible flowers.
